For this keto jam, frozen and fresh strawberries are suitable, which are chopped in a blender to a puree. You can make a smooth puree by additionally filtering the puree through a sieve, or keep small pieces of berries.

  1. Wash the strawberries, place in a blender bowl and chop until smooth. You should get 1.25-1.5 cups of puree.
  2. In a small saucepan (non-metallic), heat the strawberry puree, water, sweetener, lemon juice, and xanthan gum. Bring to a boil. Reduce heat to medium and cook for 5 minutes, stirring frequently with a wooden or silicone spatula.
  3. Remove from heat, let sit in a saucepan for 15 minutes to thicken the jam, then pour the jam into a jar.
