  1. Remove the pulp from the avocado and mash in a bowl with a fork until puree. Add finely chopped red peppers, lime juice, a pinch of salt, and a pinch of black pepper. Set aside.
  2. Sprinkle the chicken fillet with the remaining salt and pepper to taste and dried garlic. Heat oil in a skillet over medium heat. Add chicken and cook 4 to 6 minutes on each side until golden brown. Sprinkle with cheese, cover and continue cooking until cheese is melted, about 2 more minutes. Place the fillets on a plate, top with a tablespoon of guacamole and sprinkle with cilantro.
