Thai Chicken Salad

Thailand! No need to look for a Thai restaurant to enjoy delicious Asian salad. Do it at home! Our salad is low carb and can be made in less than 30 minutes!

  1. Wash and dry lettuce leaves. Set aside.
  2. In a large skillet, heat half the oil over medium heat. Add minced meat, onion, garlic and cook for about 5-7 minutes until the meat is browned. Transfer the meat mixture to a colander.
  3. In the same skillet, heat the remaining oil over medium heat. Add the rest of the ingredients and the minced meat and mix. Cover and cook for 10 minutes until the zucchini is tender.
  4. Transfer chicken to lettuce, garnish with fresh cilantro and chili.
