  1. Before making the omelette and red fish toast, prepare all the ingredients you need.
  2. Cut the toast bread into slices 1-1.5 cm thick.
  3. In a skillet over medium heat, melt half of the butter (5 g). Place the slices of bread in a skillet and cook for 3-4 minutes, until the bread is lightly browned.
  4. Then turn the bread over to the other side and cook for another 1-2 minutes, until golden brown.
  5. Make an omelet. Combine eggs with milk and mix thoroughly until a homogeneous mixture is obtained.
  6. Heat a skillet over low heat and melt the remaining butter. Pour the egg and milk mixture into the pan and, stirring occasionally, fry the omelet for about 2-3 minutes.
  7. When the omelet is almost done, add a little salt to taste. Mix everything again and turn off the heat.
  8. At this stage, the omelet mass will be slightly damp, but after 30-60 seconds the omelet will reach full readiness due to the residual heat of the pan.
  9. Divide the omelette in half and place over the toast.
  10. Top each toast with omelette with 1-2 slices of lightly salted trout.
  11. Toasts with omelet and red fish are ready. Sprinkle a pinch of finely chopped fresh herbs on top of the prepared toast if desired and serve.
