A fragrant, delicate and delicious homemade cake according to this recipe always turns out to be very successful. For its airiness, such pastries are even called Cloud Cake - how fluffy its crumb is. If you wish, you can even cut the finished cake into 2-3 cakes, layer it with your favorite cream and it will be an excellent cake for a family tea party.

Wheat flour for making this cake can be tasted not of the highest, but of the first grade (although I have not tried it yet). Potato starch can be replaced with corn starch (with it, the finished cake will be even more tender), but then a little more will be needed (130 grams).

  1. To prepare a tender vanilla cake, we need the following ingredients: wheat flour, potato starch, chicken eggs, refined vegetable oil, granulated sugar, water, baking powder, salt and vanillin (alternatively, replace with vanilla sugar). All foods should be at room temperature.
  2. First of all, turn on the oven to warm up (180 degrees) and prepare a dry mixture: mix 200 grams of wheat flour (I use Lida flour) with 100 grams of potato starch, a pinch of salt and 10 grams of baking powder.
  3. After that, we sift the mixture through a fine sieve to get rid of possible lumps.
  4. Pour 220 grams of sugar, vanillin into a beating container and break 3 large eggs there. Pay attention to the color of the yolk: I have store eggs, but the yolks are rich orange - probably the chickens were given food with dyes ..
  5. Beat the sugar and eggs with a mixer at high speed for about 5-7 minutes, or until the mass brightens and increases in volume, and the sugar is completely dissolved. Remember that the whipping time depends on the power of your electric assistant and may differ from the one indicated in the recipe!
  6. Pour 125 grams of drinking water to the mass.
  7. Followed by 120 milliliters of refined vegetable oil.
  8. Stir everything until smooth, after which you can add the flour mixture to the liquid part of the dough.
  9. Quickly knead the dough - as soon as the flour is not visible, we stop stirring (muffin dough does not like to be fiddled with for a long time). In consistency, such a dough turns out to be quite liquid, it is pouring.
  10. I advise you to use the baking dish with a hole - be sure to grease it with vegetable oil and pour the dough into it. Alternatively, you can use soft butter, but in this case, additionally sprinkle the surface with wheat flour (shake off the excess). This method of preparing a baking dish is called a French shirt.
  11. Pour the muffin dough into the prepared mold.
  12. We bake a delicate vanilla cake in a preheated oven at 180 degrees for about 1 hour. After that, turn off the oven and let the baked goods stand with the door closed for another 5 minutes. It is very important to understand that the baking time can be very different from the one indicated in the recipe! It depends not only on the oven (I have a gas, bottom heating, no convection, and you can have an electric one), but also its nature, as well as the size of the baking dish.
  13. Remove the finished vanilla cake from the mold and let it cool completely. Sprinkle with powdered sugar (optional).
