Vegetable soup with red beans

Vegetarian red bean soup can be eaten by vegetarians as well as those who are fasting. It does not contain meat or any other animal products.

  1. Boil water and pour boiling water over the tomatoes, after making a cross-shaped cut at the tip of each tomato. After a couple of minutes, remove the tomatoes from the hot water and peel them. Cut the tomatoes into cubes.
  2. Wash the carrots and celery. Peel the onion and chop as small as possible. Cut carrots and celery into half rings or thin strips.
  3. Place a heavy-bottomed saucepan on the stove and pour the vegetable oil into it. When it is well warmed up, fry the vegetables prepared in advance on it. Then add the diced zucchini to them and fry until soft.
  4. Add chopped peeled tomatoes, tomato paste, garlic through a press to the pan. Season with salt and pepper. Simmer all ingredients for five minutes.
  5. Pour clean drinking water into a saucepan and wait for the soup to boil. Simmer it for twenty minutes. Then add the canned red beans. Simmer for another five minutes. Sprinkle with herbs before serving, if desired.
