Vegetarian keto rolls

These rolls are adapted for the keto diet and vegetarian menu as they do not contain rice or fish products.

  1. Prepare your ingredients. Heat the coconut oil in a medium skillet and add the cauliflower rice. Fry for 5-7 minutes, until the rice is browned and completely cooked. Cut the avocado, cream cheese and cucumber into thin slices and set aside along with the cauliflower rice.
  2. Place a long layer of plastic wrap on a clean, flat surface with a nori wrap on top. If you have a sushi mat, place it under the plastic wrap. Place the cauliflower rice on top of the nori leaf in a thin, even layer. Step 1 to 2 cm from each edge.
  3. Place a layer of avocado on top of the rice, grabbing only the edge closest to you. Spread a layer of cream cheese over the avocado and then a layer of cucumber.
  4. Lift up the near edge of the nori sheet along with the plastic to bring the filling together. Wrap the nori slowly around the filling. Make sure you are not rolling the film. When you roll up the roll, remove the foil from the nori sheet.
  5. Using a sharp knife, cut the sushi into 8 pieces. Start in the middle so that the rice is not pushed out by the pressure of the knife.
  6. Serve with sugar-free soy sauce.
