Zucchini and walnut salad

Meet your new favorite low carb meal! It is a crispy, nutty salad with a great aroma of stewed zucchini.

  1. In a small bowl, combine all the dressing ingredients. We leave the dressing to develop the flavor while you make the salad.
  2. Cut the zucchini lengthwise and scoop out the seeds. Cut the zucchini halves crosswise into 1 centimeter pieces.
  3. Heat olive oil in a skillet over medium heat until it starts to overflow. Add the zucchini to the saucepan, season with salt and pepper, and fry until lightly browned but firm.
  4. Chop the salad, place the salad in a large bowl and stir in the cooked courgettes.
  5. Fry the nuts in the same saucepan as the zucchini. Season with salt and pepper, place nuts on salad and drizzle with salad dressing.
