Zucchini cheese snack cake with nuts

Easy-to-prepare baked goods made from unusual ingredients. Zucchini is responsible for the texture of the cake, and two types of cheese are responsible for the taste, one of which is moldy, but very little of it is required. Zucchini snack cake with cheese and nuts can be served with the main course, or separately, with some unobtrusive spread. It is convenient to take such a cupcake with you if you are going to have a snack outside the house.

  1. Prepare all ingredients.
  2. Choose hard cheese of good quality - the taste of the finished baked goods depends on it. Kefir is suitable for any fat content.
  3. Remove the butter from the refrigerator 2-3 hours before cooking.
  4. Sift flour into a deep bowl.
  5. Add baking powder, salt, sugar, ground black pepper. Stir.
  6. Place soft butter in the center of the dry mass.
  7. Rub with a spoon with dry ingredients until crumbly.
  8. Turn on the oven to preheat to 180 degrees.
  9. Make a depression in the center of the flour and butter crumbs. Add eggs and kefir.
  10. Stir with a spoon until all ingredients are moist.
  11. Wash the zucchini, trim the edges on both sides. Grate the peeled zucchini on a medium grater.
  12. Add the zucchini to the dough. Stir.
  13. Grate hard cheese on a coarse grater. Cut the blue cheese into small cubes.
  14. Add two types of cheese to the dough. Stir.
  15. Set the pan over moderate heat and heat well. Add walnuts. Dry the nuts for 4-5 minutes, occasionally rolling with a spatula.
  16. Cool the dried nuts a little and chop not too finely.
  17. Add the nuts to the dough. Stir.
  18. The dough turns out to be thick.
  19. Grease a baking dish with butter and sprinkle with flour. Shake off excess flour by turning the mold over (I use a rectangular glass mold measuring 28 x 12 cm).
  20. Place the dough in a mold and smooth with a spatula.
  21. Send to the preheated oven and bake the cake at 180 degrees for 40-60 minutes (baking time depends on the characteristics of your technique, the size and material of the mold used). Check readiness by piercing it with a wooden skewer (if the dough is baked, the skewer should come out dry).
  22. Zucchini cheese snack cake with nuts is ready. Cool the baked goods in a baking dish and place on the wire rack.
  23. After cooling completely, place the cake on a serving platter.
