Deep-fried crispy zucchini that can be made in place of French fries. The courgettes are cut into slices, then breaded in egg dressing, cheese with almond flour, and oven baked with a little oil.

  1. Preheat oven to 200 degrees C. Cut two courgettes into thin cubes. If the zucchini rind is thin, leave the rind. Place the zucchini on a towel to remove moisture.
  2. Prepare two breading mixtures. In one bowl, mix together the egg and homemade ranch dressing (or mayonnaise), in the other mix the almond flour, spices, and parmesan.
  3. Dip the zucchini in the egg mixture and then in the almond flour mixture.
  4. Place the zucchini on a parchment-lined baking sheet (or with a silicone baking mat), lightly oiled. Also brush the top of the slices with cooking spray or cooking oil to make them crispy.
  5. Bake for 15 minutes, open oven, gently turn with a fork and bake for another 10 minutes until golden brown and crisp.
