Cake "Three Chocolates" is the most delicate dessert, which combines the taste of three types of chocolate: black, milk and white. Preparing this mousse cake is not difficult, but it will take a lot of time.

  1. First, a biscuit cake is made - the basis of the cake. Whisk eggs with sugar.
  2. Add the sifted flour, cocoa and baking powder and mix until smooth without lumps.
  3. We bake the cake until cooked (check with a match) and cool, then cut out a circle from it, smaller in diameter than the shape - a gap should be left about 1 cm around the edges.
  4. We put the resulting base in a mold and begin to prepare the first layer - a layer of dark chocolate mousse.
  5. We breed gelatin: pour 10 g of gelatin into 2 - 3 tbsp. l. hot water for swelling.
  6. We heat dark chocolate with 50 g of butter in a water bath. Then we combine the warm chocolate-butter mixture with warm gelatin, filtered through a sieve.
  7. Then we take a third of the cream (150 ml) from the total amount and beat until the state of "peaks".
  8. Mix cream and chocolate-gelatin mixture. Mix thoroughly.
  9. We lay the detachable form from the inside with a transparent dense film - at least 7-10 cm above the sides of the form. Pour the resulting dark chocolate mousse into the form as the bottom layer of the future cake.
  10. In the same way, prepare the milk chocolate mousse and pour over the first layer.
  11. We repeat the procedure with white chocolate and pour it as the top - front layer.
  12. We let the cake stand in the refrigerator for several hours, preferably all night and try to carefully remove it onto a dish.
  13. We decorate the top of the cake, we decorated it with chocolate leaves.
