Chocolate brownie with creamy caramel cream

Ingredients

  1. I soak the gelatin in water and leave it to swell.
  2. Cream (fat content from 30%) is combined with butter (fat content 82%) and heated to a hot state.
  3. I pour sugar into a saucepan with a thick bottom and heat it to an amber color, without interfering, but simply rolling from side to side.
  4. Important! do not overdo the sugar, otherwise the cream will be bitter.
  5. When all the sugar is dissolved, pour in the HOT cream with butter and, without removing from the heat, mix until smooth.
  6. Remove from heat and add salt and vanilla.
  7. I mix.
  8. I filter the mixture through a sieve.
  9. I let the mass cool slightly and add the swollen and melted gelatin.
  10. I use an immersion blender.
  11. I cover with a film in contact and put it in the refrigerator for 12 hours to stabilize.
  12. After the time has elapsed, beat the cream with a mixer for 3-4 minutes, until a lush, airy state.
  13. The cream should be homogeneous, pleasant, beautiful color!

  15. Preparing the ingredients for the brownie.
  16. I preheat the oven to 170 degrees.
  17. Eggs with sugar and salt just mix with a whisk until smooth.
  18. Pour the hot, melted butter over the chocolate and leave for a few minutes.
  19. Then I mix, and such a glossy mass should turn out.
  20. I combine both masses and mix.
  21. Then I add all the flour.
  22. And last but not least, alcohol.
  23. Here is the dough! Pretty fluid!
  24. Pour the batter into a 18x19cm baking dish.
  25. I'm leveling. It is very convenient to do this with the help of such a spoon.
  26. I send the dough to the oven preheated to 170 degrees for 25 minutes.
  27. The crust should be dry on top. Let the brownies cool.
  28. I take it out of the mold and, in principle, the dessert is already ready to eat.
  29. It's good on its own or with a scoop of vanilla ice cream.
  30. But I had a different idea. I cut the edges
  31. I cut into portions.
  32. This is the brownie inside.
  33. I put caramel cream on top.
  34. I sprinkle with chocolate chips.
  35. And the incomparably delicious dessert is ready!
