Chocolate cupcake with curd balls

Incredibly tasty and beautiful chocolate muffin made from biscuit dough, with cottage cheese and coconut balls.

Ingredients

Directions

  1. Mix flour with cocoa. Add baking powder and salt to it as well.
  2. In a deep bowl, mix cottage cheese, sugar, starch and coconut flakes.
  3. Mix well and knead with your hands.
  4. Divide the curd mass into 8 equal parts.
  5. Take a piece of cottage cheese mass and flatten on both sides. Put a berry in the center (I used strawberry jam, but you can use any fresh berries or jam).
  6. Roll up the ball. Do the same with all curd.
  7. Beat the eggs with a mixer at medium speed for 2 minutes.
  8. Add sugar. Whisk again for 1 minute.
  9. Add sour cream and starch, beat again for 1 minute.
  10. Add flour and cocoa mixture. Mix well with a spoon from top to bottom.
  11. Take a cake pan (it is better if it is not cold, you can slightly heat it in the oven in advance). Grease a cake mold with vegetable oil. Pour the chocolate batter into the mold.
  12. Then lay out the cottage cheese-coconut balls in a circle and lightly press down so that they are half immersed in the dough.
  13. Send to the oven preheated to 180 degrees for 30 minutes. Then remove the mold from the oven and cool slightly.
  14. Then remove the chocolate cupcake with curd balls from the mold.
  15. Sprinkle with powdered sugar.
  16. Chocolate cupcake with cottage cheese balls is ready. Cook with pleasure!
