  1. Melt the chocolate on the steam bath.
  2. In a bowl, mix the butter and 50 g of sugar. Using a mixer, beat the butter and sugar for 3 minutes.
  3. Separate the whites from the yolks. Add the yolks to the butter-sugar mixture and beat with a mixer for another 2 minutes.
  4. Add the melted chocolate to the mixture. Beat all the ingredients with a mixer.
  5. Now add flour to the dough and beat again with a mixer until smooth.
  6. In a bowl, add 25 g of sugar to the proteins.
  7. Beat egg whites well with sugar until stiff peaks form.
  8. In small portions, spread the whipped proteins into the dough and gently mix the proteins into the dough with a spatula in one direction.
  9. Lubricate the ceramic molds with butter and lightly sprinkle with flour. Pour the rest of the flour out of the molds.
  10. Fill each mold halfway with batter.
  11. Peel the pears and remove the core using a special tool.
  12. We put a pear in each mold, slightly drown it in the dough.
  13. We send the molds with the dough to the oven preheated to 190 degrees for 20 minutes. After that, lower the oven temperature to 160 degrees and bake chocolate cupcakes for another 25-30 minutes.
  14. Chocolate muffins with pears are served directly in ceramic molds.
