One of my favorite cupcakes - moderately moist, fragrant, with pieces of nuts, a bright chocolate flavor and hints of cinnamon and vanilla. The cake dough is kneaded on the basis of mashed potatoes, sour cream and vegetable oil, in addition to flour, semolina is also added, and cocoa powder provides a rich chocolate color. Mashed potatoes in the taste of the cupcake are not guessed in any way - it rather serves for texture.

  1. Wash the potatoes, pour water in a saucepan and put on heat. After boiling water, cook for 20-30 minutes (willingness to determine with a fork).
  2. Peel the cooked potatoes and mash into a puree.
  3. In a deep bowl, combine eggs with sugar.
  4. Beat for 2 minutes at medium speed of the mixer.
  5. Add vegetable oil and sour cream.
  6. Add potatoes next. Stir for 1 minute with a mixer.
  7. Pour all dry ingredients - cocoa, cinnamon, flour, baking powder, semolina and vanilla sugar. Mix everything with a mixer. The dough should be thick. If necessary, add another tablespoon of flour.
  8. Coarsely chop the walnuts and put into the dough.
  9. Line a cake tin with parchment paper or lightly oil it.
  10. Put the dough into a mold.
  11. Bake a chocolate cake with nuts and cinnamon at 180 degrees for 30-40 minutes (orient yourself according to your oven. After 30 minutes, check the cake by piercing it with a wooden skewer - it should come out dry.
  12. Let the cake cool slightly.
  13. Chocolate muffin on mashed potatoes, with cinnamon and nuts, ready.
  14. When serving, the cupcake can be poured with melted chocolate or condensed milk - the result will not yield even to a cake.
  15. It's the perfect accompaniment to a cup of tea or coffee.
