Cottage cheese cupcakes with chocolate

Fans of the unique taste and aroma of cottage cheese pastries should certainly appreciate these cupcakes. Inside, they are moderately moist, with a rich creamy taste. Dark chocolate adds a slight bitterness that contrasts beautifully with the sweetness of the dough.

  1. Prepare the ingredients for the cupcakes.
  2. Take cottage cheese fat and plastic, but not too wet. If the cottage cheese is wet, squeeze it out with cheesecloth.
  3. Melt the butter in advance in the microwave or on the stove and set aside.
  4. Turn on the oven to preheat to 170 degrees.
  5. Rub the cottage cheese through a sieve.
  6. Add sugar, salt, eggs, sour cream and baking powder to the cottage cheese.
  7. Mix thoroughly until smooth.
  8. Add flour.
  9. Mix until you get a thick dough. The moisture content of the curd may vary, so the amount of flour may vary slightly.
  10. Pour in the cooled melted butter.
  11. Mix thoroughly again.
  12. Place paper liners in cupcake liners or grease the cupcake cups with a thin layer of oil.
  13. Divide the dough into molds (I got 7 fairly large cupcakes).
  14. Break the chocolate into equal pieces according to the number of cupcakes (for contrast with the sweet dough, I took bitter dark chocolate and broke it into pieces weighing 5 grams).
  15. Put a piece of chocolate in the center of each cupcake (I broke each piece in half again and folded the halves so that the chocolate was flush with the dough).
  16. Finish forming the cupcakes by covering the chocolate with batter.
  17. Bake cottage cheese muffins with chocolate in an oven preheated to 170 degrees for about 35 minutes, then try them “on a dry skewer” (if the pointed wooden stick remains dry after piercing the dough, the muffin is ready).
  18. Let the cupcakes cool on a wire rack before serving.
  19. Delicious chocolate muffins are ready.
