Crumbly muffins with almonds and berries

These pretty cupcakes are made with butter, powdered sugar, ground almonds and egg whites. The dough is especially tender and very tasty. Instead of berries, you can use pieces of juicy fruit (peaches, plums or apricots).

  1. Preheat oven to 180 degrees. Sift flour and powdered sugar into a bowl. Add almonds. In another bowl, beat the whites with a mixer until a stable white mass.
  2. Slowly fold dry ingredients and butter into beaten egg whites. Pour the batter, mixed until smooth, into 6 muffin tins with paper cups. Sprinkle berries on top and gently press them in. Bake cupcakes for 30-35 minutes.
