Cupcake on kefir with dried apricots

  1. Prepare all the ingredients needed to make homemade kefir cake with dried apricots.
  2. Remove kefir from the refrigerator in advance, it should be at room temperature.
  3. Melt the butter in the microwave or otherwise, let it cool.
  4. Pour sugar, vanilla, salt into the butter and beat in the egg.
  5. Beat the combined ingredients with a mixer for about a minute.
  6. Pour in kefir at room temperature.
  7. Mix the liquid dough base.
  8. Combine flour with baking powder and sift into a bowl with butter-kefir mixture.
  9. Now, with a mixer at low speed, knead a homogeneous dough.
  10. Rinse the apricots, dry them and cut into small pieces.
  11. Transfer dried apricots to kefir dough.
  12. Turn on the oven to preheat to 180 degrees.
  13. Stir the dried apricots into the batter with a spoon or spatula.
  14. Line a rectangular cake tin with parchment paper and place the batter in it. Smooth out the surface of the dough.
  15. Bake the cake in a preheated oven at 180 degrees for about 35 minutes. Remove the finished cake from the mold and let it cool completely.
  16. Cut the cake with dried apricots into pieces and serve at the table during dessert.
