Soften the butter at room temperature. Break two-thirds of the cookies into small pieces, crush the rest into very fine crumbs with a crush. Coarsely chop the nuts. Break the chocolate into small pieces.
Pour the cream into a saucepan, bring to a boil, add the sugar mixed with cocoa powder, mix thoroughly and cook for a couple of minutes so that the sugar and cocoa are completely dissolved.
Transfer the saucepan to the water bath in a large saucepan, one-third filled with mild boiling water, add the chocolate pieces and stir until the chocolate is melted.
Remove from heat, let stand for a minute, then add butter and stir until smooth.
Pour in the fine cookie crumbs and mix thoroughly again. Add cookie pieces and nuts and mix gently.
Transfer the resulting dough to a film, mold the sausage. Wrap in plastic wrap and place in the freezer for 30 minutes. Then check and tweak the form if necessary. Return to freezer for 4-6 hours.
Remove the finished sausage from the film, sprinkle with powdered sugar and wrap in parchment.
