Gooseberry sponge cake

Baking with gooseberries is not as popular as, say, with strawberries or raspberries, but it definitely deserves attention, because the gooseberry sourness just perfectly contrasts with the sweetness of the dough and causes a firework of taste sensations. A cake made from butter dough with red gooseberries on top is not only very tasty, but also beautiful.

  1. Prepare the necessary ingredients. Take the butter out of the fridge ahead of time to soften it up a bit.
  2. Turn on the oven to preheat to 180 degrees.
  3. In a bowl, combine soft butter, sugar, vanilla sugar and a small pinch of salt.
  4. With a mixer on high speed, beat the combined ingredients until a light buttercream is formed, about 2 minutes.
  5. In the resulting mass, beat the eggs.
  6. Whisk again for about 1 minute.
  7. Mix flour with baking powder and sift through a sieve into the butter-egg mixture.
  8. Mix with a whisk a smooth dough without lumps.
  9. Line the bottom of a springform pan with baking parchment and transfer the dough into it. Level the surface with a spatula.
  10. I used a form with a diameter of 17 cm, the cake turned out to be very high, you can take a form with a larger diameter (20-22 cm), but the amount of gooseberries will need to be increased.
  11. Pick off the stems from the gooseberries. Rinse it in cold water and pat dry on a paper towel.
  12. Now cut off the tails of each berry.
  13. Lay the prepared gooseberries on the surface of the dough.
  14. Send the form to the preheated oven and bake the gooseberry pie at 180 degrees for 35-40 minutes.
  15. Gooseberry sponge cake is ready.
  16. Remove the cake from the pan, transfer to a wire rack or plate and let the cake cool completely.
  17. Cut the delicious gooseberry pie into portions and serve at the table during dessert.
