Lemon muffins with poppy seeds

The muffins are very tender, with lemon flavor and poppy seeds. Lemon poppy seed muffins are prepared simply and quickly. You will have soft and fragrant cupcakes for tea.

  1. Prepare all the necessary ingredients.
  2. Sift flour.
  3. Remove the zest from the lemon using a fine grater. Also squeeze the juice from the lemon.
  4. In a bowl, combine the sifted flour, baking powder and salt. Mix with a whisk.
  5. Melt butter.
  6. In a cup, mix eggs and sugar, beat with a blender or mixer until white.
  7. Add dry ingredients to egg mixture in two stages, beating until smooth.
  8. Add melted butter, beat.
  9. Add lemon juice, lemon zest and poppy seeds to the dough. Mix well with a spatula. Cover the dough with cling film and refrigerate for 15-30 minutes (preferably 1.5-2 hours, then the muffins will be juicier).
  10. Pour the dough into silicone molds or metal molds with paper baskets, leaving 1 cm unfilled to the edge. Bake Lemon Poppy Seed Muffins in 180 degree oven for 20-35 minutes, until done.
  11. Lemon poppy seed muffins are ready.
