Muffins with apricots and apricot kernels

Ingredients

  1. Prepare all the necessary ingredients.
  2. Only take kernels from very large apricots. If you take the bones of small apricots, they will be bitter.
  3. Crack the eggs, separating them into yolks and whites.
  4. Beat the yolks with a mixer for a couple of minutes.
  5. Pour water into the yolks and beat for another minute.
  6. Then, gradually adding sugar mixed with vanilla sugar, beat the yolks until white.
  7. Next, add the sifted flour with baking powder, beating with a mixer until smooth.
  8. Beat egg whites with a pinch of salt until stiff.
  9. Add beaten egg whites to the batter.
  10. Stir the egg whites into the batter (do not beat!).
  11. Cut apricots in half, remove pits. Cut the apricots into 0.3 cm cubes.
  12. Roll the pieces of apricots in flour or starch.
  13. Add apricots to the batter and mix.
  14. Preheat the oven to 180 degrees.
  15. Prepare molds for baking cupcakes. I have a silicone mold. If you have a metal mold, put paper cups for baking cupcakes in each cell or grease with butter.
  16. Put two apricot kernels in each cell of the mold
  17. Fill molds 2/3 full with batter. If you want to get muffins with a small top, fill the molds halfway.
  18. Bake apricot muffins in the oven at 160-180 degrees for 15 minutes.
  19. I got 18 cupcakes.
  20. Serve cupcakes with apricots and kernels with tea or milk.
