Muffins with raspberries, cream cheese and crispy oatmeal are a wonderful summer dessert. Such cakes will be a great treat for all the sweet tooth who love raspberries and pastries with this tasty and healthy berry!

  1. In a bowl, mix butter, sugar, flour and oatmeal.
  2. Mash the combined ingredients with a spoon or fork until crumbly and refrigerate the bowl.
  3. Next, in a separate bowl, prepare the filling for the cakes. In a bowl, combine cream cheese, egg yolk and sugar.
  4. Stir until a homogeneous mass is obtained. Place the bowl of filling in the refrigerator.
  5. Whisk the egg, egg white and sugar in a bowl until fluffy. Pour in milk, sunflower oil and whisk again.
  6. In another bowl, sift flour, salt and baking powder.
  7. Without stopping beating, add flour to the base of the dough and mix the dough until smooth.
  8. Line cupcake molds with paper capsules. There will be 12 muffins in total.
  9. Pour the dough into the prepared molds. Arrange raspberries on it, 3-4 berries for each muffin.
  10. Remove the bowl of oatmeal and buttercream filling from the refrigerator. Distribute 1 tsp. cream for each cupcake.
  11. Spread the oatmeal on top of the cream.
  12. Bake the raspberry muffins in a preheated oven at 200 degrees for about 25 minutes.
  13. Transfer the finished raspberry cupcakes to a plate and let them cool.
