Vanilla cake with milk, dried apricots

  1. We prepare the necessary products.
  2. The butter must be taken out of the refrigerator in advance and left on the table so that it softens well. If there is no time for this, the butter can simply be melted.
  3. Soak the dried apricots in warm water for 15 minutes in advance. When the dried apricots swell and become softer, drain the water. Dry dried apricots with paper towels. Cut the dried apricots into small pieces.
  4. Turn on the oven to heat up to 180 degrees.
  5. In a bowl, mix all the dry ingredients: sifted flour, sugar, salt, baking powder and vanilla.
  6. If you use vanilla sugar, then you can take a whole bag of it. You can’t put a lot of vanilla in baking, as there will be an unpleasant bitter aftertaste.
  7. Break the egg into the bowl with the dry mixture. Cut the softened butter into pieces and also put it in a bowl.
  8. Add milk and knead the dough.
  9. The dough should be slightly thicker than for pancakes.
  10. We put the pieces of dried apricots there and mix.
  11. Pour batter into greased muffin tins, a little short of the edges.
  12. Molds can be either metal or silicone. Silicone molds do not need to be oiled.
  13. You can also use one large cake pan. In this case, the baking time will increase.
  14. We bake muffins with dried apricots for about 20 minutes (or 30-35 minutes if we took a large form).
  15. After the time has passed, pierce one of the cupcakes with a toothpick. If the toothpick comes out dry, the cupcakes are ready.
  16. We take out the finished cupcakes from the mold, sprinkle with powdered sugar on top and cool slightly.
  17. Then we serve cupcakes for tea.
