Vanilla cupcakes with buttercream

Delicious vanilla buttercream cupcakes. Light, airy, slightly moist and fairly easy and quick to prepare.

Ingredients

Directions

  1. In a large bowl, beat soft butter, sugar and salt until light and fluffy, about 3 to 4 minutes.
  2. Add sour cream, vanilla extract or vanilla sugar and beat until combined.
  3. Add the egg whites in two additions and beat with a mixer after each addition until they are combined.
  4. Add milk little by little and continue beating until smooth.
  5. In a separate bowl, sift flour and baking powder.
  6. Add half of the dry ingredients to the batter and beat until combined.
  7. Add remaining dry ingredients and beat until combined. As soon as the mixture becomes homogeneous, stop the mixer.
  8. Place paper liners in a cake pan. Transfer the dough to a pastry bag (you can use an ice cream spoon), fill disposable paper forms halfway - this is about 50 g of dough.
  9. Bake the vanilla cupcakes in a preheated oven at 175°C for 20 minutes or until a toothpick inserted comes out dry.
  10. After baking, allow the cupcakes to cool slightly in the pan, then remove and leave to cool completely on a wire rack.
  11. While the cupcakes are cooling, prepare the frosting.
  12. Beat soft butter with a mixer until light and fluffy, about 4-5 minutes.
  13. Add half of the powdered sugar and beat until smooth.
  14. Add vanilla extract.
  15. Add the rest of the icing sugar and beat everything until smooth.
  16. Add milk and continue beating.
  17. If the cream is very thick, add 2-3 more tablespoons as needed. l milk and whisk until smooth.
  18. Put the cream in a pastry bag and decorate each cupcake with cream.
  19. Vanilla buttercream cupcakes are ready. Made 12 small cupcakes.
