Arugula and tomato salad is a classic summer salad especially common in Mediterranean cuisine. Eat a salad with arugula and tomatoes - saturate your body with vitamins for the whole day.

  1. Rinse and dry the arugula. Place in a large bowl.
  2. Rinse the tomatoes, cut in half and add to the salad bowl. You can also use large tomatoes, as well as tomatoes of different varieties and sizes. Just slice them up.
  3. If you don't want to just pour the olive oil over the salad, you can make a sauce. To do this, in a food processor, combine grated Parmesan, olive oil, 2 tablespoons of lemon juice and lemon zest (a teaspoon). Whisk and pour over the sauce over the salad, or serve in a saucepan.
