  1. In a heavy-bottomed saucepan over medium heat, evaporate about a third of the aniseed orange juice.
  2. Add sugar and salt, remove from heat and gradually pour in olive oil, whisking mixture.
  3. Fry the shrimps in olive oil.
  4. Cut cucumbers, radishes and cheese into thin slices. Peel the orange, remove the fillet from each wedge. Mix vegetables and orange with arugula, toss with orange dressing.
  5. Arrange the salad on bowls, shrimp around. Drizzle with vinegar, garnish with Parmesan and watercress. Serve immediately.
