Peking cabbage is an ideal salad ingredient. In this salad, its taste, like the taste of tofu, is determined by a complex dressing.

  1. For dressing, combine sushi vinegar, soy sauce, sesame oil, and vegetable oil. Add very finely chopped pickled ginger and finely chopped green onions to the dressing. Let it brew for 15-30 minutes.
  2. Chop 1 small head of Peking cabbage thinly, season with salt and leave for 15-30 minutes.
  3. Break the tofu into small pieces. Toast 4 tablespoons. l. sesame seeds until golden brown. Combine cabbage with 3/4 dressing and 3 tbsp. l. sesame seeds.
  4. Arrange on plates, top with tofu, drizzle lightly with dressing and sprinkle with sesame seeds.
