Baked pork tenderloin with mustard and honey

  1. Wash the pork fillet well and then dry it with paper towels. Salt and pepper.
  2. Mix in a small bowl olive oil, freshly squeezed lemon juice, mustard, a pinch of ground black pepper and honey. Peel the garlic, pass through a press and add to the marinade. Mix everything thoroughly to a homogeneous consistency.
  3. Spread the prepared tenderloin on a baking sheet covered with foil and pour honey-mustard marinade on top.
  4. Tightly wrap the pork tenderloin with foil and leave to marinate for 30 minutes. After 30 minutes, put the pan with the meat in a preheated oven and bake at 175ºC for about 60-90 minutes (it all depends on the size of your piece).
  5. Open the foil and bake for another 15 minutes until ruddy crust, periodically watering the meat with honey-mustard sauce.
