  1. To prepare our dish, it is desirable to take a fillet of pork. Take the meat and rinse well under warm running water. Holding the meat ingredient with your hands over the sink, let the liquid drain.
  2. Spread the fillets on a cutting board and with a knife clean from grease or film. Then with the same sharp object cut the meat across the fibers into pieces no thicker than 1 centimeter. So that the juice from the meat during beating is not sprayed in different directions, wrap each piece of meat on all sides with cling film, you can in several layers. Then, putting the prepared piece of pork on a cutting board, beat well with a table hammer to a thin layer.
  3. After - take a bowl of medium size and pour warm milk into it. When the meat is beaten, unroll the cling film and remove the pieces of meat from it, then transfer to a bowl with milk for 20-30 minutes. It is important to know: the meat will turn out very tender during the preparation of chops, if we pre-soak it in milk after beating.
  4. Despite the fact that we do not cook a flour dish, I still recommend sifting the flour to remove possible lumps. Take the ingredient and pour into a sieve. Sift the flour through a sieve, placing a bowl under it. For the preparation of delicate chops a special role will not play a variety of flour product, but I advise you to take wheat flour, finely ground and premium. It is much more pleasant to cook a dish from such high-quality flour ingredient.
  5. Release the eggs from the shell by breaking it with a knife. Then - pour egg yolk and egg white into a free bowl. Here we add salt and ground black pepper to taste and mix everything with a tablespoon. Then, using a hand whisk, the egg mixture with spices is lightly beaten to a uniform consistency.
  6. Put all the dishes with the necessary ingredients close to each other and start rolling the meat. Get a clean pork chop from a bowl of milk with clean hands and immediately, without letting the milk drain, transfer it to a bowl with egg mixture with spices. Manually turn the good meat several times in this mixture and then quickly transfer it to a plate with flour.
  7. Carefully roll the chop in the flour ingredient and then again transfer to a bowl with egg mixture with spices.
  8. And only after that, taking our pork out of the bowl with the egg mixture, we transfer it to a bowl with breadcrumbs. At first glance, this is a long and exhausting process. In fact, from a culinary point of view, everything is justified: a layer of flour will not allow the juice to flow out of the meat and therefore it will be very juicy, and the egg mixture with spices will make our chop tender and fragrant. And, of course, crackers form a crispy crust on our chop. Pork chops are juicy, soft and crunchy at the same time.
  9. Take a frying pan and put it on high heat. Immediately pour vegetable oil into it and heat it. After the oil is well heated, put the pork chops in a pan.
  10. Serve tender chops immediately, transferring them to a serving dish. The dish can be decorated with green salad leaves or sprinkled with finely chopped greens - dill, parsley or green onions. You can serve tender chops as a stand-alone dish or with a side dish: for example, with mashed potatoes or fried potatoes. You can with porridge, such as rice or buckwheat. Our dish goes well with a salad of fresh vegetables.
