Stirlitz's favorite dish is mysteriously called icebain, which means "ice bone" in German. However, the baked pork knuckle with cabbage, potatoes and beer has no hint of ice. It's just that once upon a time, German children made skates out of handlebars. Adults - a hearty snack to beer, children - entertainment. Unfortunately, we do not know how to make bone skates, so we limited ourselves to making ice cream or Bavarian shanks.

Ingredients

Directions

  1. By the way, let's take a few needles, I got three (it all depends on the size).
  2. Put to cook in a large saucepan with carrots, a couple of onions, a piece of celery, parsley root, a piece of leek, well, and spices can be thrown without sparing: allspice, about 15 pieces and 2 times more black, peas. Cook - at least 2 hours. For the second hour, add 4-5 cloves and the same amount of bay leaves. As for salt - I usually salt at the end. Although according to the instructions - bay leaf and cloves are cooked immediately and salted immediately. It is important to note the handles must be placed under water completely.
  3. After 2 hours, remove the needles, carefully so as not to damage the integrity.
  4. Marinade. It is prepared from the following components. In a liter of light, not bitter beer, dilute 5 tablespoons of honey and add ground hot pepper and a couple of teaspoons of cumin. You can also add a tablespoon of dark soy sauce.
  5. Leave to marinate for 2 hours.
  6. After that, place the needles on a baking sheet and bake in the oven. The temperature was about 200 degrees. Bake for an hour, not forgetting to periodically water the marinade and melted fat.
  7. Boil the potatoes shortly before the knuckle is ready.
  8. Place the prepared knuckle on a large plate, place boiled potatoes and sauerkraut with onions and apples next to it.
