Beans, Peas and Radish Salad

Here's an example of how a regular winter bean salad turns into a real summer meal. All you need to do is add a couple of radishes and a few crunchy young peas. This salad will be a hearty independent dish or an excellent side dish.

  1. In a small bowl, combine olive oil, lemon zest, lemon juice and honey; beat to form an emulsion. Peel and finely chop the shallots and add to the dressing. Throw the beans in a colander and rinse. Transfer the beans to a bowl, cover with half the dressing and let sit for 15 minutes.
  2. Drain the peas, finely chop the radishes, scallions and basil leaves and add to the bowl with the beans along with the peas. Drizzle with the remaining dressing, stir and serve immediately.
