Beet salad with onions and nuts

The perfect combination of beets and walnuts in this bright and healthy salad is fully revealed, harmoniously complemented by onions, garlic, fresh herbs and spices. The salad turns out very juicy, with a pleasant crunch of onions and nuts and the appropriate sweetness of boiled beets, and vegetable oil and apple cider vinegar are the dressing - no mayonnaise!

  1. Prepare the necessary ingredients.
  2. The nuts can be pre-dried in a dry frying pan and cooled before chopping - so they will have a more pronounced taste and aroma, which will make the salad tastier.
  3. Wash the beets with the hard side of a clean kitchen sponge and transfer to a saucepan. Fill the beets with cold water level and put on the stove, over high heat. When the water boils, reduce the heat to a minimum and leave the beets to cook until soft, this will take about 40 minutes.
  4. Cool the boiled beets and peel.
  5. Grate the beets on a coarse grater or a Korean-style carrot grater (this option is preferable). Alternatively, beets can be cut into thin strips. Transfer the prepared beets to a bowl.
  6. Peel the onion and cut into thin half rings.
  7. Transfer the onion to a bowl, pour boiling water for 30 seconds. Then leave in ice water for 10 seconds.
  8. Drain the water from the onion, and squeeze the onion itself. Transfer the onion to the beets.
  9. Grind the walnut kernels with a knife into large crumbs.
  10. Wash parsley and dill and chop.
  11. Combine nuts and herbs in a small bowl.
  12. Peel the garlic and pass through a press. Pour salt, suneli hops, ground black pepper and ground coriander into a bowl, and add chopped garlic.
  13. Pour in apple cider (or wine) vinegar and stir.
  14. Transfer the peanut dressing to the bowl with the beets and onions.
  15. Pour in sunflower oil and stir.
  16. Beet salad with nuts, onions and herbs is ready.
