  1. Finely chop the onion, finely grate the carrots.
  2. Fry the onions for a few minutes in vegetable oil, add carrots, a little water, stew for 2-3 minutes.
  3. Peel the zucchini, cut into small cubes, add to the onions and carrots and simmer all together for 5 minutes. Add a little salt.
  4. Beat the eggs (with a blender), add salt and add finely chopped greens (leave a little green for decoration).
  5. Preheat oven to 180 degrees. In a bowl, mix well the beaten eggs with the vegetable mixture, then place in a baking dish. Place in a preheated oven.
  6. The cooking time for frittata depends on the obtained thickness of the mixture in the mold and can be from 10 to 40 minutes. We must wait until the mixture is no longer liquid. In the photo, the thickness of the frittata with zucchini is considerable (about 5 cm), so the frittata had to be kept in the oven for 40 minutes.
  7. Garnish the zucchini frittata with herbs when serving.
