Brizoli are thin egg pancakes with meat filling, very tasty and satisfying. We will deviate a bit from the classic recipe and add pickled cucumbers, cheese and sour cream-garlic sauce to the brizole filling, which not only improve the taste of the finished dish, but also make the brizoli more juicy!

  1. Break eggs into a bowl, pour in milk and add a pinch of salt. Shake eggs with milk until a smooth egg mixture is obtained.
  2. Grease a wide skillet with a little sunflower oil and heat well. Pour 1/4 of the egg mixture into the skillet, spreading over the entire bottom as a thin pancake. Fry an egg pancake on one side over high heat until the surface hardens.
  3. Then turn over and fry for another 15 seconds.
  4. Remove the pancake from the pan and use the remaining egg mixture to fry three more pancakes in the same way.
  5. Transfer the minced meat to a bowl. Pour salt and black pepper into the minced meat.
  6. Mix the minced meat thoroughly and divide into four parts.
  7. Cut pickled cucumbers into thin strips and divide into four parts.
  8. Grate the hard cheese on a coarse grater and divide into four parts.
  9. Peel a large clove of garlic.
  10. To prepare sour cream-garlic sauce, pour a pinch of salt, a pinch of black pepper into the sour cream and squeeze a clove of garlic through a press.
  11. Stir the sauce.
  12. Preheat oven to 180 degrees.
  13. Form brisols. Put 1/4 of the minced meat on the egg pancake and spread it over the entire surface of the pancake, slightly receding from the edges.
  14. Brush the minced meat with some of the sour cream and garlic sauce. (Leave some of the sauce to grease the rolls.)
  15. Place 1/4 of the sliced ​​pickles and grated hard cheese on one side of the pancake.
  16. Starting on the cucumber and cheese side, roll the pancake into a tight roll.
  17. Roll the other three rolls in exactly the same way and place them in a baking dish, greased with a little sunflower oil.
  18. Brush the rolls with the remaining sour cream and garlic sauce.
  19. Bake the brizoli in an oven preheated to 180 degrees for about 30 minutes.
  20. Brizoli with minced meat, pickles and cheese are ready.
  21. Serve hot brizoli with any side dish.
