Carpaccio of champignons

Carpaccio is an Italian appetizer made from thinly sliced raw foods. In this case, these are raw champignons, with a sauce of tomatoes and basil, with herbs and parmesan.

  1. Wash mushrooms, peel, cut into thin slices.
  2. Squeeze lemon juice on them.
  3. Finely chop the basil.
  4. Finely chop the tomato.
  5. Mix tomato and basil. Pepper and salt.
  6. Prepare the dressing. To do this, mix olive oil and soy sauce in equal parts.
  7. Drizzle the tomatoes and basil with the dressing.
  8. Mix until smooth.
  9. Spread the tomato and basil sauce on a plate in an even layer.
  10. Lay the mushroom slices on top.
  11. Spread arugula leaves.
  12. On top of the mushroom carpaccio, thinly slice or grate the cheese coarsely.
