A simple, colorful and easy-to-make salad made from fresh carrots, nuts and hard cheese. Such a salad can be a side dish for a meat dish or an independent snack that can be prepared and served at the table in just 15 minutes.

  1. Toast the nuts in a dry frying pan over low heat for 5-7 minutes, until golden and fragrant.
  2. Peel carrots and garlic. Grate carrots and cheese on a coarse grater.
  3. Coarsely chop the toasted nuts.
  4. Mince a clove of garlic.
  5. Place cheese, carrots, nuts and garlic in a salad bowl. Add mayonnaise and mix thoroughly.
  6. Taste the salad and add some salt to taste. If desired, you can add 1 more small minced garlic clove.
  7. Lay the salad in a heap on a serving plate. Garnish the salad with parsley, if desired. Finely chop the rest of the parsley and sprinkle over the salad.
