We are more accustomed to using celery stalks for salads. But here I suggest taking the flavorful and crunchy root of this amazingly healthy vegetable. Combined with apple, pomegranate and celery dressing, it forms a mega-healthy and light salad.

  1. Wash the celery and fruit, as well as the parsley. Peel the celery root and apple. Remove the grains from the pomegranate.
  2. Grate apple and celery for Korean carrots. Can be cut into thin strips.
  3. Combine vinegar, oil and honey. Heat the honey, if it is hard.
  4. Peel the pistachios, chop the parsley and combine with the apple, celery and pomegranate.
  5. Pour the dressing over the salad, salt, if necessary, stir and serve.
