  2. Melt one third of the butter in a nonstick skillet. The oil should just be heated, and not sizzle or “squirt”. Place both slices in a skillet. Fry on one side for about 2 minutes until golden brown.
  3. Remove the bread slices from the pan and place them on a cutting board, toasted side up. Place 1-2 slices of cheese on one slice of bread, then cover the sandwich with a second slice of bread. The fried sides should be inside the sandwich.
  4. Melt the second portion of the butter in a skillet, reduce heat to low. Fry the sandwich on one side until deep golden brown, about 5 minutes. Remove the sandwich from the pan and add the remaining third of the oil. Then put the sandwich back in the pan, toasted side up. Season with salt.
  5. When the other side is golden brown and the cheese is completely melted, remove the sandwich from the pan.
  6. Transfer the sandwich to a plate and cut into several pieces for easy eating. Serve hot. Bon Appetit.
