  1. Prepare cauliflower rice. To do this, divide the cabbage into inflorescences and stems. It is the inflorescences that are suitable for cooking rice, so most of the stems can be removed or used to prepare another dish.
  2. Place inflorescences in a blender and chop. The cauliflower should be broken into small pieces similar in size to rice. Remove the cabbage from the blender. Cauliflower rice is ready.
  3. Prepare chicken thigh broth. Rinse chicken thighs in running water, put in a deep saucepan, pour 2-3 liters of clean water, put on the stove. After the water boils, skim off the foam, add salt and pepper to taste, reduce heat. Cook covered for 40-60 minutes. Strain the resulting broth. Butcher meat: remove bones and skin, cut into small pieces.
  4. Heat oil in a saucepan, add chopped onion and celery, salt and pepper. Cook vegetables for about 5 minutes over medium heat until tender.
  5. Add chopped garlic thyme, paprika and leave for another minute.
  6. Add chicken pieces and cauliflower pieces, vegetable mixture to boiling chicken broth and reduce heat. Cook soup until cauliflower is tender, 10-12 minutes. At the end, add salt and pepper to taste, stir.
  7. If you store the soup in the refrigerator, you can prepare the dish without adding cauliflower.
  8. Cabbage rice is added before serving. It is necessary to heat the soup with fresh cabbage for 10 minutes over low heat until the "rice" is cooked.
