  1. Prepare all ingredients. Rinse the chicken liver thoroughly and pat dry with paper towels. Peel the onions.
  2. Cut the onion into thin half rings.
  3. Remove the parsley leaves from the stems and chop.
  4. Heat vegetable oil in a frying pan, put onion and fry for 3-4 minutes over medium heat, until transparent and soft.
  5. In the meantime, free the chicken liver from blood clots, veins and fat. Cut the liver into large pieces.
  6. Add chicken liver to the pan to the onion, add salt, black and red ground pepper and oregano. Stir and fry the liver for 5-6 minutes on all sides over medium heat.
  7. After a while, when the liver is sufficiently fried (no more blood is produced), beat the eggs into the pan.
  8. Stirring constantly, fry the liver with eggs in a pan for another 3-4 minutes, until the eggs are fully cooked.
  9. Add the parsley to the skillet and stir. Remove the cooked dish from heat.
  10. Chicken liver fried with onions and eggs is ready.
