I guess we weren't the only ones waiting for the famous cinnamon buns to adapt to our low-carb keto needs.
If, while on keto, you happened to pass by the Cinnabon bakery with shaky legs, this will not happen again. These buns will make them jealous themselves.
A small spoiler - mozzarella and curd cheese dough most of all resembles a freshly baked, most tender, soft biscuit.
It just melts in your mouth ... Try it!

  1. Preheat oven to 190 Cº.
  2. In one bowl, beat eggs with salt, vanilla, baking powder, sweetener and coconut flour.
  3. Place the grated mozzarella with curd cheese in another bowl. Microwave for about 2 minutes. Remove and mix well to form a homogeneous mass. Act quickly and move on to the next step.
  4. Combine the cheese and egg mixture while the cheese mixture is hot - combine them with a fork.

  10. In the meantime, you can do the cream. Place in a blender (or whisk with a mixer) the ingredients: cream, cheese, sweetener and vanilla. Whisk for half a minute.
  11. Once the buns are ready, remove them and brush with cream.
