Cold Italian soup

I found this recipe when I wanted to cook something unusual from zucchini, of which there were a lot this year. I loved the cold Italian soup so much that I am sharing this recipe.

Ingredients

Directions

  1. Wash the courgettes, peel and cut into slices.
  2. Then boil the zucchini in salted water until tender.
  3. When the zucchini are ready to drain and cool.
  4. Then grind with a blender.
  5. We take natural yogurt. We will add it so that the soup is as thick as you like.
  6. Grind the mint leaves.
  7. Add yogurt and mint to the zucchini in a bowl and mix well.
  8. Salt and pepper to taste.
  9. Pour the soup into bowls.
  10. Decorate the top with mint leaves.
  11. Sprinkle with olive oil. Bon Appetit!
