  1. Wash and dry the cucumber and tomatoes, cut into medium cubes. Chop the herbs and shallots.
  2. Free the cauliflower from the leaves. Wash, dry, disassemble into inflorescences and send to the bowl of a blender or food processor.
  3. Grind into such a crumb.
  4. Combine the cabbage with the rest of the ingredients. Add salt and pepper, olive oil (if avocado oil is available, use it) and lemon juice. Mix everything gently. Diet salad made from fresh vegetables can be served at the table. Bon Appetit!
