  4. Agar-agar put on fire and warm up. Pour in about 400 grams of sugar (or a substitute to taste) and bring to a boil.
  5. Boil the syrup for 5 minutes over medium heat, and then cool slightly.
  6. Add the protein to the cooled apple mixture and beat.
  7. Gradually pour in hot (but not boiling) syrup to the proteins, continuing to beat constantly. Diet marshmallows at home will turn out tender if the mass is well-whipped and airy enough.
