A very simple, low-calorie, healthy and vitamin salad for lovers of raw pumpkin. The cooking time in the recipe is indicated taking into account the manual cutting of vegetables, but if you have a Korean carrot grater, then this salad can be prepared much faster.

  1. Let's prepare all the ingredients. Wash vegetables, peel carrots and pumpkin.
  2. Grate carrots on a large grater. Cut the pumpkin, cucumbers and carrots into thin sticks. The most convenient way to cut pumpkins and cucumbers is to use a Korean carrot grater. Unfortunately, I do not have such a grater, so I cut everything manually.
  3. Mix all the vegetables together, add olive oil, lemon juice and salt, sugar, black pepper to taste. Thoroughly mix everything together, try, straighten to your taste.
  4. Easy and healthy salad with pumpkin is ready. Garnish with parsley sprigs, if desired, and serve.
