Eggplant, cheese, tomato and walnut salad

Try to make a salad of eggplant, cheese, tomatoes and nuts, I really like this set of ingredients, but there is no need to adhere to strict rules. Sometimes I replace cheese with feta and add more tomatoes, and you do as you like. Bon appetit!

  1. Wash the eggplant and cut into cubes.
  2. Put the eggplant in a pan with heated vegetable oil and fry, stirring occasionally, for 15-20 minutes.
  3. Then add soy sauce and fry for another 5 minutes. Cool the prepared eggplants.
  4. Grind nuts and garlic in any way convenient for you.
  5. Cut tomatoes into thin slices.
  6. Brynza cut into cubes.
  7. Combine all ingredients in a bowl, add chopped parsley, black pepper and mix.
