I am sharing a simple and useful recipe for cooking eggplant on a wire rack over a fire. It turns out a hearty and tasty rosy snack. You can serve it with a kebab, or you can serve it instead of a kebab! Delicious and juicy!

  1. Cut the eggplants into "boats", remove the middle. If the middle is with their seeds, feel free to throw it away, and if it is also young - add to the minced meat. We rub the boats themselves with salt and leave for 5 minutes, until the juice stands out (this is how we remove the bitterness). We wash them under running water, and rub them with spices and salt to taste again.
  2. Minced meat (you can also take meat, but I prefer pre-chopped champignons) mixed with spices and the rest of the eggplant pulp. Here are also chopped onions and carrots. Mix, fill the eggplants, fill with tomato paste.
  3. Next, spread the slices of pepper on top of the minced meat, sprinkle all this splendor with the remaining chopped onion. We wrap each boat in foil. We bake on a wire rack for 10 minutes (each).
  4. And then we unfold the foil and serve the dish to the table!
