Eggs baked in a vegetable marrow

An unusual dish with a summer mood - eggs baked in a vegetable marrow. The usual scrambled eggs in such pretty zucchini barrels becomes much more appetizing. And under the scrambled eggs, there is a delicate, juicy zucchini filling. A spectacular breakfast with a minimum of products!

Ingredients

  1. We prepare products according to the list.
  2. We immediately turn on the oven to warm up to a temperature of 180 degrees.
  3. Wash the zucchini and cut it across into 4 parts about 5-7 cm long. From each part of the zucchini, carefully, not completely, remove the middle, leaving the "bottom" and thus forming the cups. This can be done with a teaspoon. We put the extracted pulp aside for now (it will still be needed).
  4. We wash the dill and chop it finely with a knife.
  5. Peel and chop the garlic.
  6. Cut about half of the zucchini pulp into small cubes (the other half can be used for other dishes).
  7. In a deep bowl, combine chopped zucchini pulp, garlic, half chopped dill and 1 tbsp. a spoonful of vegetable oil. Salt and stir.
  8. Grease the baking dish with the remaining vegetable oil. We put the zucchini "cups" into the mold.
  9. We fill the cups with the zucchini filling to about half. We send it to the oven, preheated to 180 degrees, for about 15 minutes.
  10. After a while, we remove the form with zucchini from the oven. Do not turn off the oven.
  11. Carefully break the egg into a separate bowl (the yolk should remain intact) and pour the egg into a zucchini cup. In my two "cups" the whole egg fit, and in two - the yolk and part of the protein. Return the mold to the oven for about 20-25 minutes, until the protein sets.
  12. We take the baked eggs out of the oven and sprinkle the remaining dill around the edges, trying not to touch the yolk.
  13. Eggs baked in a vegetable marrow are ready.
  14. The scrambled eggs turned out to be very juicy. Zucchini with herbs inside baked and looked like a delicate sauce.
  15. Very nice and delicious breakfast.
