Fasulada is a traditional thick Greek soup made from vegetables and beans. Fasulada is a very filling and thick dish, so it can be served as a soup, as well as as a main second course.

  1. To prepare this dish, the beans should be soaked overnight. Before cooking, it should be thoroughly rinsed under running water. Place in a large saucepan and cover with 2 liters of water. Then bring to a boil over high heat.
  2. While the water is just starting to boil, peel the tomatoes and cut them into cubes. Peel the carrots and also cut into cubes, chop the celery. After the beans have boiled add these ingredients, as well as olive oil, tomato paste, sugar, pepper. Do not add salt and parsley yet. Then, over high heat, bring the contents of the saucepan to a boil and reduce to low heat. Close the lid tightly and cook for about an hour, until the beans are completely soft.
  3. Then open the lid and add salt, boil a little more and you can serve. Add chopped parsley to each serving.
